Smoked Chicken and Halloumi Phyllo Roll with a Sun-Dried Tomato Dressing recipe by Ken Garvey

Smoked Chicken and Halloumi Phyllo Roll with a Sun-Dried Tomato Dressing

 

Ingredients

200g Smoked Chicken
200g Halloumi
1 Small red onion
Chopped parsley
4 sheets Phyllo pastry
150g Sun-dried tomatoes in oil

 

Method

Finely dice the chicken, onion and cube the halloumi. Mix with the parsley and season only with pepper. Lay out the phyllo pastry. Place a handful of the mix onto the pastry and roll into a fat cigar shape. Brush with egg wash and bake for 12 minutes at 170°c. Puree the sun-dried tomatoes with some of the oil in a blender. Place the parcel on top of some mixed greens and finish with a drizzle of the sun-dried tomato oil.
