Steamed Mussels
(serves 4)
Ingredients
2Kg Fresh mussels
¼ Onion, finely chopped
½ Clove of garlic, crushed
50ml Olive oil
100g Butter
1 Bunch copped herbs
½ Glass of white wine
Method
Heat a deep bottom pan on high heat. Add olive
oil and half the butter. Fry off onion and garlic. Add cleaned
mussels, white wine and herbs. Cover and steam for 5 minutes
or until mussels have opened. Place in a large serving bowl
and serve with crusty bread and a lovely glass of white wine.
