Marbled Chocolate Malva Pudding
(Dessert - Serves 6)
Ingredients
1 cup of milk
1 tsp of baking powder
1 cup of flour
1 tsp of bicarbonate of soda
1/2 a cup of sugar
1 egg
1 tsp apricot jam
A pinch of salt
250g butter
3 squares of white chocolate
3 squares of dark chocolate
Method
In a bowl, beat the egg & sugar together,
add the jam and the melted butter. Mix the milk &
bicarbonate of soda together and add to the mixture. Stir in
the flour & baking powder.
Beat the mixture until smooth. Grease an oven dish (20cm x 30cm),
halve the chocolate squares
and place them in the bottom of the dish. Pour the mixture over
the chocolate.
Bake in a preheated oven for 30 minutes.
For the sauce:
Mix 1/2 a cup of cream, 1/2 a cup of milk, 1 cup of sugar, 1/2
a cup of water, 1/2 a cup of butter,
1 tot of Amarula & 1 tot of Cognac/Brandy in a saucepan
on low heat for a few minutes.
The final presentation:
Cut the malva pudding into squares, place on a plate and drizzle
the sauce around it. Garnish
with some fresh strawberries & mint.
