Opening Pandora's .... Cellar

Quite often I am asked to indicate how long
a wine should be laid down before drinking. So I thought it
might be of interest to those readers who enjoy wine to offer
a very general guideline about maturation.There are always exceptions,
which to my mind prove the rules.
For Sauvignon Blanc, these wines should be drunk
within 2 years of vintage. For Chardonnay, do not leave the
wine for longer than 4 years at the most. Merlot and Shiraz
between 4 to 7 years. Pinot Noir between 5 to 8 years. Pinotage,
from 2 up to 10 years depending on what wine. (Pinotage is the
most difficult cultivar to gauge.) Cabernet Sauvignon between
7 to 10 years. Cabernet based blends up to 12 years, but only
for the top of the range, otherwise 3 to 7 years. For serious
stickies between 4 to 7 years.
I would advise you to drink the wines younger
rather than older. In that way you will avoid a lot of disappointment.
Wine is all about enjoying the craftsmanship of the winemakers
and their styles.
