Sublime Spanish Sherry

From the district of Jerez, situated in the
South-Eastern part of Spain, comes Sherry wine.
This world- renowned fortified wine is made from the Palomino
Blanco grape and is fermented totally dry. The wine is then
fortified with neutral spirit to bolster the alcohol.
The finest wines are then made into Fino, which
during maturation develops a fungus on the surface of the wine
called Flor. It enables the wine the wine to stay light, delicate
and very fresh. Arguably, the best aperitif globally.
The rest of the wine is aged in oak barrels
through a topping up system called the Solera. This guarantees
that for however long is necessary, the wine remains exactly
the same.
One last property that is only found in the
production of Sherry; the longer the wine matures the stronger
the alcohol. Instances have been noted whereby wine going into
wood with an alcohol of 18 degrees has emerged with an alcohol
of 24 degrees. A truly remarkable wine.
